Is there a way for me to see the opportunities my students are most interested in?

Yes. On the Analytics Overview on your Dashboard, you can select the Date Range and click on “View Details” under Opportunity Views to see which opportunities have been viewed the most. (Same applies to Opportunities Favorites, Interests, Applied and Participated.)
