Is there a way for me to see which opportunities my students are most interested in?

Yes. On the Analytics Dashboard, you can select the Date Range and click on “View Details” under Opportunity Views to see which opportunities have been viewed the most.

Same applies to Opportunities Favorites, Applied and Participated. You can also add Communities or Interests filters to see reports about different subsets of students.
